The Aquiares estate continues to push the boundaries of Costa Rican coffee under the leadership of Diego Robelo, through careful experimentation with processing while maintaining the exceptional quality the farm has become known for. The estate spans over 900 hectares, with around 200 hectares protected as native forest, reflecting a long-standing commitment to biodiversity and sustainability.
Mariana is an F1 hybrid developed by crossing IAPAR 59 with an Ethiopian landrace, and is one of the world's first F1 hybrids that can be propagated from seed. For this lot, fully ripe cherries are fermented in sealed, oxygen-free tanks, where the anaerobic environment encourages complex fruit flavours to develop, before the coffee is slowly dried as a natural on raised beds and patios to maximise the sweetness and complexity in the cup. This combination of an innovative variety and meticulous processing reflects the estate's long-standing focus on experimentation and continual refinement.
